High quality wine, crystal clear with a straw yellow, is obtained from grapes harvested by hand at the end of November on the hill with the best exposure to the sun in the Valul lui Traian wine region. The collected grapes are peeled, after which the cryomaceration technique is applied, which consists in keeping the must in contact with the must for 48 hours, at a temperature of 2 ° C. After clarification, the must is subjected to a supervised alcoholic fermentation at a controlled temperature of 12-13 ° C. This process allows the extraction of aromatic substances from the skin of grapes, giving the wine a typical aroma. Maturation takes place in oak barrels for 9 months.
Once upon a time, there was a monastery of monks here that produced wine. Intense wine, with aroma of honey, peach, orange peel and freshly mowed hay, wildflowers. With intense acidity and minerality, with a mineral-iodized aftertaste.
The culinary menu can include oyster dishes, foie gras, sushi, tuna, seafood, fish cooked in spicy sauce or light fruit desserts.
